Pumpkin Spice Donut Holes

Oh baby! Are these great! I love the little crunch on the outside with the softer inside! And when they’re warm with fresh glaze……FABULOUS!

Again, I just have all that pumpkin in my fridge that I’m trying to get rid of! Why not just add in a few extra ingredients and fry them up! So tasty! I probably had 5 at least! Sweet and lightly spiced, these donut holes are sure to please!
Pumpkin Spice Donut Holes
1 1/4 cups all purpose flour
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch of salt
3/4 cup pureed pumpkin
1 egg
1/4 cup milk
1/4 cup oil
For the glaze:
1 cup powdered sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 teaspoon vanilla
2-3 tablespoons milk
In electric fryer or in a large dutch oven, preheat 1 1/2-2 inches of oil (canola, vegetable, peanut, any light colored oil) to 350 degrees. In large bowl, whisk all dry ingredients together until well combined. Pour in wet ingredients and whisk until uniform in color and no lumps are present. Drop batter into hot oil by the teaspoon full. Fry donut holes, flipping occasionally, for 4 minutes or until outsides are deep orange and crispy. Drain on paper towels. In a small bowl, mix powdered sugar, spices, vanilla and milk together until smooth and runny. Dip cooked donut holes into glaze and place on rack to remove any excess. Glaze will harden slightly after 5-10 minutes. Enjoy!

    You sure don't have any problem creating new ideas using up those leftovers. I never would have thought of these, but wow, I am taught again.
